As a full time fitness instructor, my life is (hectic) at best and insane (!) at worst. Take a peek into my world and what I eat in a day as a vegan.

I’m back on Youtube with a “What I Eat in a Day” video. In this video, I show you a typical day in the life with exact portions of what I eat. Every day is completely different (as are my eating habits) but, this particular day broke down as the following:

  • Total calories: 2140 cals

  • Breakfast (w Macrobar): 490 (76c/17p/14f)

    • 1/2 cup of oatmeal, 1 banana, 1 Macrobar

  • Lunch: 719 (107c/28p/21f)

    • Red lentil chili, delicata squash, kale, brown rice

  • Snack: 386 (70c/9p/10f)

    • Homemade Granola & Almond Milk, homemade brownies

  • Dinner: 545 (101c/22p/4f)

    • Squash, black beans, kale, edamame, brown rice
